Summer Black Bean Salad

3 ears of corn 
4 T. fresh squeezed lime juice 
2 T. olive oil 
1 T. red wine vinegar
2 cans black beans, rinsed and drained
2 large tomatoes, chopped 
3 jalapeño peppers, seeded and chopped 
1 small purple onion, chopped 
1 avocado, chopped 
1/3 c. fresh cilantro, chopped 



Cut corn from ears and roast about 5 min in dry pan.  Whisk together next 7 ingredients in a large bowl, and add corn, beans and remaining ingredients.  Toss well, cover and chill for 2 hours. This is even better the next day.
