Sopapilla Cheesecake

  • 2 cans crescent rolls
  • 2 (8 oz.) pkgs. cream cheese (room temperature)
  • 1 stick of butter
  • 1 cup sugar
  • 1 t. vanilla
  • 1/8 cup cinnamon



Preheat oven to 350 degrees, spray casserole dish with nonstick spray. Mix cream cheese in bowl, with sugar, vanilla, and MOST of cinnamon (leave a little to sprinkle on top) Melt butter in microwave. Roll out one can of crescent rolls on bottom of pan Spread cream cheese mixture all over. Layer 2nd can of crescent rolls on top of mixture. Pour melted butter all over the top, mix some sugar with remaining cinnamon and sprinkle over butter until most of butter is absorbed by sugar and cinnamon. Bake for 30 minutes, then check every 5 minutes, looking for bottom "crust" to be done.
