Mexican "Fudge" Appetizer - Favorite Mexican Recipe Contest Winner

4 c. grated Mexican blend cheese

6 eggs

1/2 c. drained diced jalapenos or drained Rotel (we tested with diced Mt. Olive jalapenos)

1/8 t. garlic powder, or to taste


Lightly beat eggs with garlic powder in a medium bowl. 

Stir in jalapenos and cheese.  Flatten out in greased 9x13 dish. 

Bake for 30 minutes at 350 degrees.

Let cool and cut in small squares.  May be served with sour cream.
