Creamy Chicken and Broccoli Casserole

  • 2 c. cooked chicken meat, diced large (we used pre-cooked rotisserie chicken breast meat)
  • 2 c. uncooked broccoli, cut into small flowerettes (we cut off the stems)
  • 5 oz. cream cheese, softened
  • 3 T. butter, melted
  • 1/2 c. heavy cream
  • 1/2 c. grated parmesan cheese
  • 3 T. mayonnaise
  • 1/2-1 tsp. of your favorite seasoning blend (we used Nature's Seasoning)
  • 3/4 c. chicken broth
  • salt and black pepper, to taste
  • 1 c. cooked wild or white rice
  • 1/2 c. Monterey Jack cheese, grated (for topping)


Preheat oven to 350 degrees. Lightly oil a casserole dish. 

Combine the chicken and broccoli in a large bowl. Add the softened cream cheese and melted butter, stir well.

Add all remaining ingredients except the Monterey Jack cheese. Stir well to blend and pour into the baking dish.

Sprinkle the Monterey Jack cheese on top. Bake for 45 minutes to one hour.
