Your whole family will love this hearty Taco salad recipe. It is perfect for a quick dinner or a filling lunch.
1 lb. ground beef
6 cups iceberg lettuce, romaine or spring mix
1 cup cherry tomatoes
1 cup Colby jack or Mexican blend cheese
2 cans dark, red kidney beans (drained and rinsed)
2 cups crushed Nacho cheese-flavored Doritos
1 cup French dressing
2 (1 oz) packages of McCormick (or similar brand) taco seasoning
1 large avocado (optional)
How to prepare salad:
Cook ground beef until brown. Drain the fat from the meat, and add 1 cup of water and 1 taco seasoning packet and simmer, per instructions. Wash the lettuce and tear or chop it into a bowl. Wash the tomatoes and dice them. Drain and rinse the kidney beans. Crush the Doritos into small pieces. Combine lettuce, tomatoes, kidney beans, shredded cheese, and cooled ground beef in a large bowl. In a separate bowl, mix together one package of taco seasoning with French dressing. Pour the dressing mixture onto the salad and stir until well-distributed. Gently stir in crushed Doritos and serve.
Optional: Top with sliced avocados.
