Buffalo Chicken Balls

Ingredients:

1 lb. ground chicken
1 egg
1/2 c. chopped onions
1/2 c. chopped celery
3/4 c. bread crumbs
dash of salt and pepper
1/3 c. mild buffalo sauce
 
Sauce:
4 T. butter
1/3 c. mild buffalo sauce

 

Directions:

Preheat oven to 450 degrees F.  For the sauce melt butter and mild sauce in small sauce pan and set off to the side. Mix ground chicken, egg, onions, celery, bread crumbs, salt and pepper together. Use hands to mix ingredients together. Once well mixed add the 1/3 cup mild sauce and stir with a spoon. Let the mixture sit for 5 minutes to let the sauce get absorbed into meat.

Spray a baking sheet with nonstick spray or cover with foil. Roll the meatball mixture into balls (your choice of size) and bake for 15-20 minutes (or until firm). Once you take them out of the oven pour the sauce mixture on top of them and use a spoon to spread the sauce around. Let cool for 5 minutes.
 
**Our family likes to serve with ranch and a side of either celery or carrots. We use a bottle of H-E-B Flyin' Saucy Mild Wing Sauce (5 oz bottle)
