Sopa de Fideo: A Winter Soup Kids Will Love



Something about cold weather makes me want something warm to eat. My go-to food when the weather is cold, is soup. But, unfortunately, my kids are very picky eaters when it comes to soup. Every year, we seem to have the same traditional soups -- Caldo de Res and chicken soup. 

This year I slowly introduced new soups as side dishes to many of our main entrees months before soup season. There were many fails, but I was still able to add a couple more favorites to our cookbook like broccoli cheese soup. But my favorite soup is one that I grew up eating at least once a week. Now it's my kids' favorite and it makes my heart happy to see them enjoying it as much as I did. 

It's called Sopa de Fideo and it a soup my grandmother would make every Sunday for dinner. I remember watching her cook it. And although her recipe is perfect, I made some subtle changes to my recipe to satisfy my family's taste buds. It's easy to make and you can use different types of pasta. I occasionally use alphabet or star pasta to make it fun for the kids. 

To make your own Sopa de Fideo, you will need: 
- one bag of Fideo

- 4 Roma tomatoes

- 1 quarter of an onion

- 2 garlic cloves

- chicken powder bouillon 

- 4 potatoes

- 1 lb cooked ground beef, turkey or chicken (optional)

Add tomatoes, garlic, bouillon and water to blender. Add enough water to cover. Add more if needed. Blend until smooth and set aside. Add noodles to hot oil and fry until golden brown. This step makes all the difference in this delicious soup. Carefully pour your liquid into the fried Fideo and bring to a simmer. 

Noodles double in size while cooking, so to avoid a dry soup, add more water. Add your potatoes and cover. Lower heat and cook until the potatoes are soft; about 20 minutes. Make sure to check the liquid and add more water as needed. Taste for flavor. Add more chicken bouillon if needed before removing from heat. 

Make sure to stir it in well. Add your choice of cooked meat five minutes before removing from heat. My kids love adding the juice of half a fresh lime and homemade corn tortillas.
